Barbecued Chili Corn

Chili Corn

Use this easy recipe to impress your guests! We have used this recipe for a small intimate party of our own…as well as a fairly large catering gig. The presentation is impressive, yet it is simple to achieve and the spicy butter adds a nice kick to a normal ear of corn. We modified this recipe that originates in the following book: “Barbecues, Picnics and Salads (Bay Books Cookery Collection)” (Harpercollins)

6 corn cobs with husks

4 T butter, melted

1 t chili powder

1 t ground cumin

1 t ground coriander

1 t freshly ground black pepper

1 t seasoned salt

Remove most of the husks from the corn. Use the remaining husks to wrap around the base of the corn as a handle. Tie with string/twine.

Combine all above dry ingredients with the melted butter and brush on the ears of corn. Barbecue until tender.
